Passion Fruit Pot Cake Recipe

Ingredients for making passion fruit pot cake:

For the cake batter:

 2 cups of wheat flour (280 grams)

 2 cups of sugar (320 grams)

 1 cup of milk (240 milliliters)

 3 eggs

 2 tablespoons unsalted butter

 1 tablespoon of baking powder (shallow spoon)

For the passion fruit mousse:

 1 can of condensed milk

 1 can of fresh cream (measurement of the condensed milk can)

 ½ can of natural passion fruit juice (measurement of the condensed milk can)

 1 passion fruit (pulp)

How to Make Passion Fruit Pot Cake:

Separate the yolks from the whites and beat the whites in snow until firm. In another container, beat the butter, egg yolks and sugar for 2-3 minutes.

Tip: To help the egg whites to set, beat them with a pinch of fine salt.

Little by little add the flour and milk to the egg yolk mixture, alternately while stirring. Gently add the whites so they don't lose air and add the yeast.

Tip: Sift the flour to avoid lumps in the pot cake batter.

Pour the mixture into a pre-greased and floured rectangular cake tin and bake in a preheated oven at 180ºC for approximately 40 minutes. Remove and let cool.

While the cake is baking, prepare the passion fruit mousse: blend the condensed milk, cream and juice very well in a blender and reserve in the refrigerator for at least 30 minutes.

Cut cake slices or discs using a round cutter and separate into halves, as in the photograph. Assemble the pot cake by placing a slice of cake in the pot, followed by some passion fruit mousse. Repeat layers until you reach the top.

Tip: Moisten the cake slices with sugar syrup: heat 1 cup of water and 2 tablespoons of sugar, turn off when boiling and wait to cool to use.

Finally, decorate your cake in the passion fruit mousse pot with a little passion fruit pulp and reserve covered in the refrigerator for a maximum of 3 days. Make a success selling this delight, and let us know what you think!
